How to Maintain and Descale an Espresso Machine: Protecting Boilers, Group Heads, and Valves

A quality domestic or commercial espresso machine is a masterpiece of thermal and hydraulic engineering. Combining high-pressure vibratory or rotary pumps (9 to 15 bar), brass group heads, copper boilers, and precision three-way solenoid valves, water quality and regular maintenance dictate both the flavor of your coffee and the lifespan of your machine.

The Number One Killer of Espresso Machines: Limescale

When tap water containing dissolved calcium and magnesium carbonates is heated inside a boiler, minerals precipitate out of solution and coat metal heating elements and narrow 0.7mm brass water passages. Scale reduces boiler heat transfer efficiency, causes pressure gauge fluctuations, and jams three-way solenoid valves open or closed.

Descaling Protocols: Citric vs Sulfamic Acid

Never use household vinegar (acetic acid) on an espresso machine; it attacks copper and brass alloys, degrades silicone gaskets, and leaves persistent odors. Instead:

• Citric Acid (5% solution): Excellent for stainless steel thermoblock and heat-exchanger machines.
• Sulfamic Acid or Proprietary Commercial Cleaners: Preferred for dual-boiler machines with aluminum or brass components, as sulfamic acid dissolves scale without pitting copper boilers.

Routine Maintenance Schedule

Daily

Wipe the steam wand immediately with a damp cloth after frothing milk and purge with steam for 2 seconds. Backflush the group head with water after pulling your final shot.

Weekly

Perform a chemical backflush using specialized coffee detergent (such as Cafiza) in a blind filter basket to dissolve rancid coffee oils from the shower screen and three-way exhaust tube.

Annually

Replace the rubber group head gasket and shower dispersion screen. Over time, heat vulcanizes rubber gaskets into brittle plastic that leaks around the portafilter under brew pressure.
